USDA prime beef is aged and trimmed on site to create tender, flavorful steaks cooked over fragrant, Hawaiian kiawe wood.
We believe this process retains the tenderness and taste of the meat while reducing the fat content appreciably. The native Hawaiian Kiawe wood cooks with a more intense, even heat and compliments the flavor of our fine beef.
